Ice cream cupcake


I was asked to do a fun cupcake tutorial at our church's youth group for girls yesterday. It was so fun and I had a blast doing it. I came up with this idea to do a cupcake ice cream sundae. I used my recipe for homemade marshmallow fondant and just thought I'd share the recipe.
For the fondant:
8 oz marshmallows
1 Tb water
2-4 cups powdered sugar
shortening
flavor/coloring if desired
All you do is melt the marshmallows in a bowl with the water. Grease a mixing bowl (a kitchen aid with the dough hook is ideal, but anything will work) and also the beater with the shortening. This prevents sticking. Once the marshmallows are in the bowl you can add your color and or extracts to flavor it. It also tastes fine by itself. Slowly incorporate the powdered sugar and beat and mix until it pulls completely away from the sides of the bowl. Cover in an airtight container or wrap with plastic wrap.
To make Chocolate fondant, follow the same instructions except with the melted marshmallows add 1 oz melted unsweetened chocolate and 1 TB cocoa powder.
To make this cupcake, just frost a cupcake with butter cream frosting. Then roll out the pink fondant on a surface lightly dusted with cornstarch or powdered sugar. Cut out a circle with a kitchen glass and cover the cupcake. Smooth it on there and trip any excess with a knife of kitchen shears. Roll out your chocolate and find a flower cut out shape and put on top of the pink fondant. You might need to put a dab of butter cream to make it stick. Take your butter cream used for frosting and pipe a cute "whipped cream swirl" on top of the chocolate. Add sprinkles or chopped nuts to it. Then if you want, take some additional fondant and dye it red and make a ball for the cherry. Poke a little hole in the top if you want to add the stem, then roll out some chocolate for a stem and add it. By the end, you will have a cute little ice cream cupcake sundae. So cute for birthday parties or a family night. Tasty! Good luck and enjoy!
